Chef Warren Caterson continues his cooking series at Manatee Libraries with three additional classes in 2018, based on his award-winning Cookbooks, Table for Two: The Cookbook for Couples and Table for Two: Back for Seconds. 

 

Join Chef Warren as he shares dozens of kitchen tips, cooking hints and humorous anecdotes about the joys and challenges of cooking for two.

Spanish Cuisine 

Chef Warren will explore the cuisines of Andalucía, Basque Country, Valencia, Catalonia (where the first cookbook in Spain was written) and more. He will show how many of the dishes of Spain can be prepared in your own kitchen using fresh and readily available ingredients. Saturday, January 27, 11:30 AM to 12:30 PM @ Downtown Central

 

Seafood 101: Cooking Finfish & Shellfish

Chef Warren will talk about buying seafood fresh versus frozen, how to avoid dry fish, the best methods to use, differences between farm-raised and wild-caught fish, reasons why certain fish is more available and less expensive, using canned oysters or clams in place of fresh and whether to serve red wine with seafood. Irish Cuisine

It’s not an oxymoron, and Chef Warren will explain why. He’ll also discuss why corned beef and cabbage are considered the Irish National Dish, why the Irish eat so many potatoes, how to cook with beer and what haggis is and why anyone would want to eat it. Just Added! Florida Cuisine

Chef Warren will explain the various cultures that have contributed to Floridian cuisine and how it rivals the lauded Mediterranean cuisine for its health benefits and ease of preparation. He also shares creative ways to use fruit and spices to liven up run-of-the mill entrees, provide healthy options for your next cookout and make deliciously simple desserts that will wow your guests. Friday, March 30, 2 to 3 PM, @ Rocky Bluff

 

Each presentation will end with a cooking demonstration, preparing a healthy entrée that anyone can replicate in their own home in less than 15 minutes.

 

Chef Warren Bio

 

Warren Caterson is a chef and full-time writer who studied at the Southeast Institute of Culinary Arts. He is the award-winning author of Table for Two: The Cookbook for Couples, "Table for Two: Back for Seconds"  and the upcoming "Cooking Outside the Lines: Musings of an Extemporaneous Chef " (Winfield & Scott Press). As someone who grew up in a family that loved to cook and whose household on Long Island Sound bustled every weekend with dozens of aunts, uncles, cousins and neighbors, Chef Warren learned early-on the benefit of good food and good drink with good friends. In addition to writing, he travels extensively presenting his informative and entertaining cooking demonstrations at Food & Wine Festivals, Home and Garden Shows, Conventions and other events. He resides in Sarasota, Florida.
